Gourmet Granola

This granola is my family's favorite by far. We always have a jar of this in the pantry for when hunger strikes. We eat it like cereal with soy milk, as a snack, or over soy yogurt. It is also great by the handful when you want a little something to tide you over until the next meal.

Gourmet Granola

Ingredients:

2 1/2 cups oats
1/2 cup shredded coconut
1/2 cup raw sunflower seeds
1/2 cup pumpkin seeds
1/4 cup flax seeds
1/4 cup hemp seeds
2 tbsp chia seeds
1/4 cup buckwheat
3 tbsp cacao nibs
rounded 1/2 tsp salt
1 tsp cinnamon
1/2 cup maple syrup
1/4 cup coconut oil

1/2 cup raisins

Directions:

Pre-heat oven to 400 degrees. Put the oats, coconut, sunflower seeds, pumpkin seeds, flax seeds, hemp seeds, chia seeds, buckwheat, cacao nibs, salt and cinnamon in a large mixing bowl and toss to combine.

Melt the coconut oil and mix it with the maple syrup and pour this over the oat mixture. Stir well to coat everything with the syrup and oil. Put in a greased baking dish (I use a large rectangle glass baking dish) and put in the oven. You will bake it for 25 minutes total. Stir after 10 minutes, and then let it bake for another 10. Stir again, and then put it back in the oven for the last 5 minutes. Let it cool and add the raisins.
