Whole Wheat Biscuits

Yum
These whole grain biscuits complement soup or salad, and also make a great breakfast when smothered with jam. They are quick and easy to make and are one of those recipes that you come back to over and over.

Whole Wheat Biscuits

Ingredients:

2 cups whole wheat flour
1 tbsp baking powder
1 tsp salt
1 tbsp flax meal (they turn out fine without this, but are more tender when the flax is added)

1/3 cup coconut oil (solid)
1 tbsp agave nectar
2/3 cup cold water (plus a couple more tablespoons if necessary)

Directions:

Preheat your oven to 450 degrees.

Combine the flour, baking powder, and salt in a mixing bowl. Cut in the coconut oil with a fork or a pastry blender until it forms small pea sized crumbles. You can also use your hands to do this, which can be messy and fun. Next, add the cold water and agave to the bowl and mix to combine.

To keep things easy, knead the dough for about a minute right in the bowl. If the dough does not quite pull together, you can add another tablespoon or two of water (one at a time) to incorporate all of the flour.

Grab chunks of dough, roll it between your hands and press into a flat circle. You can also roll the dough out and cut into circles with the top of a glass if you want the biscuits to be even and pretty. I don't mind the inconsistencies that come from hand rolling, and it keeps things simple.

Bake them on an un-greased cookie sheet at 450 for 12 minutes.
