Vegan French Toast

Cooking with chickpea flour takes a leap of faith. When you taste the flour raw it is hard to imagine it won't ruin your dish. But you really should take that leap, because somehow chickpea flour transforms when cooked and makes a delicious crust on the bread that is reminiscent of an egg batter. It is an awesome transformation that is so good.

I find my chickpea flour at a local health food store, and I keep it in the freezer. It lasts a really long time and is ready to go whenever you have some bread that is starting to get a bit stale. All of the other ingredients in this recipe are staples that I keep on hand; which makes this an easy weekend favorite.

Vegan French Toast
Ingredients:

1 cup soy milk
2 tbsp cornstarch
1 tsp vanilla
1 tbsp maple syrup
pinch of salt
1/3 cup chickpea flour
6-8 slices bread (I prefer heartier whole grain breads over white bread)

cooking spray
vegan margarine
maple syrup

Directions:

Heat a non-stick pan over high heat.

Whisk the soy milk with the cornstarch to incorporate them completely. Then add the vanilla, maple syrup and salt and mix to combine. Finally, add the chickpea flour and whisk to combine. You may have a few clumps of the chickpea flour, but that is okay.

Spray your pan with cooking spray and quickly dredge a slice of bread in the soy milk mixture. I dredge only long enough to get both sides moistened, but I do not let the bread soak. Hold up the bread to let any excess drip off, and then put it into the preheated pan. Check it frequently and flip the bread over when the first side has started to brown. Cook it on the other side, until both sides are browned and there are no more soggy spots. Continue to spray the pan in between each slice, and coating slices of the bread until you are out of the soy milk mixture.

Serve with vegan margarine, maple syrup, or any of your favorite toppings.
