Tropical Pineapple Muffins

These muffins are great for breakfast, or as a sweet snack. They are moist with a nice hint of coconut to complement the pineapple.

Tropical Pineapple Muffins



Ingredients:

1 cup all purpose flour
1 cup whole wheat flour
1/2 tsp salt
2 tsp baking powder
1/2 cup sugar

1/3 cup vegetable oil
1/2 cup full fat canned coconut milk (mixed before measuring)
1 cup crushed pineapple with 1/2 cup pineapple juice
1/2 cup shredded coconut
1 tsp vinegar

Directions:

Preheat your oven to 350 degrees, and lightly spray a muffin pan with cooking spray.

Combine the dry ingredients in a large mixing bowl. You will need the all purpose flour, whole wheat flour, salt, baking powder, and sugar.

Once the dry ingredients have been mixed well, add the vegetable oil, canned coconut milk, crushed pineapple, shredded coconut and vinegar. Mix again until all the ingredients are just incorporated. Distribute the batter evenly amongst 12 muffin tins, and bake for 18-20 minutes. You want the tops to be golden brown and spring back to the touch. Also, a toothpick inserted into the center of a muffin should come out clean.
