Cucumber and Tomato Salad

This is a simple and fresh summer salad that is quick to put together.  I came up with it to take advantage of the fresh garden vegetables that are so abundant this time of year.

Cucumber and Tomato Salad


Ingredients:

1 tbsp minced onion
1 large cucumber, sliced
2 tomatoes, sliced

1 tbsp minced fresh herbs (basil, oregano, parsley) or 1 tsp dried mixed herbs
1 tsp agave nectar
1 tbsp olive oil
2 tbsp red wine vinegar
Salt and pepper to taste

Directions:

Prepare the veggies, and put them in a large mixing bowl. Toss with the dressing and enjoy!
