Simple Sautéed Greens

Sometimes the simplest things are the best.  I love greens and have tried them massaged with olive oil, dressed with tahini, and sautéed with vinegar and dried fruit. These were all great ways to prepare and enjoy greens. Even with all of the great options out there, I usually go back to this simple method of preparing them. I love the simplicity, I love the taste and I love the ease of this dish. It is barely a recipe, as it is so simple, but I figured I'd share the love anyway....

Simple Sautéed Greens
Ingredients:

6 oz greens (collards, kale, chard, mustard, and any combination of greens)
2 tbsp water
1 - 1 1/2 tsp soy sauce (depending on how salty you like it. Start with 1 tsp and add more to taste)

Directions:

Wash the greens and rip them into bit sized chunks. It is good to have some water clinging to the leaves so don't worry about drying them too much. I also leave most of the stem, because I don't mind them as they give a nice textural contrast to the softer leaves.

Put the greens into a non-stick frying pan over medium heat. Add the 2 tablespoons of water to the pan and stir the greens around until they start to wilt. When they are beginning to wilt and darken in color (it doesn't take too long), add the soy sauce and stir again. You want the moisture to evaporate.

That is it. Easy, yummy and good for you, too.
