Banana Chocolate Chip Muffins

I love baked goods, and I love anything baked with banana even more. Banana bread, banana pancakes, and banana oatmeal cookies are so good, and chocolate multiplies the goodness! I first made these in mid-July of this year, and knew I needed to post them here because I have made them every couple of weeks since then. They are one of my favorite muffins and are so delicious warm out of the oven with a glass of soy milk.



Ingredients:

3 tbsp flax meal (ground flax seeds)

1/2 cup water

3 bananas mashed (yields about 1 cup mashed bananas)

1/4 cup vegan margarine
1/4 cup brown sugar
1 tsp vanilla

1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt

1/2 cup vegan chocolate chips

Directions:

Pre-heat your oven to 350 degrees.

Mix the flax meal with the water and stir to combine. Let this sit and thicken while you work on the rest of the recipe. Next, mash the bananas.

In a mixing bowl, cream together the margarine, brown sugar, and vanilla. Then add the other wet ingredients, which are the flax meal mixture and the mashed banana and stir to mix those in.

Sift in the flour, baking soda and salt. Mix until it is just combined and fold in the chocolate chips. Spray a muffin tin with cooking spray and fill the cups most of the way full with the batter. Finally, be sure to lick the mixing bowl, as this is one of the perks of vegan baking; no concerns of salmonella from raw eggs :-)

Bake for 18 minutes at 350 degrees. Let cool and enjoy.
