Chocolate Teff Porridge with Fried Banana

Teff is a cute little grain that comes from Ethiopia. It's tiny mass holds calcium, protein and fiber and is great for fueling a busy day or hard workout.  It is good for breakfast and I like to eat it as a hot cereal. Cocoa powder elevates this simple grain and the fried banana adds sweetness. I love fried bananas for their sweet flavor and creamy texture with a caramelized edge... they are such a healthy treat!

Chocolate Teff Porridge with Fried Banana


Teff Grains
Ingredients:

3/4 cups teff
2 1/4 cups water
pinch of salt
1/4 cup soy milk
1 tsp vanilla
2 tbsp cocoa powder
3 tbsp maple syrup
2 bananas
cooking spray
3 tbsp roasted sunflower seeds (optional for garnishing)

Directions:

Place the teff, water, pinch of salt in a sauce pan over low-medium heat and let it come to a low boil. Stir occasionally and let cook for 20-30 minutes, depending on the consistency you like. I like mine thicker so I let it go for a longer period of time.

While the teff is cooking, slice the bananas in half and then in half again down the middle to create four slices. Spray a non-stick pan and cook the banana over low-medium heat.


I let the banana cook low and slow for about 30 minutes and just leave it alone until the 15 minute mark when I turn it over. This way the outside gets caramelized and the inside is cooked through.

When the teff is starting to really thicken up and the water is absorbed add the soy milk, vanilla, cocoa powder, and maple syrup and stir it in. Continue to stir until the ingredients are well combined. Like most porridges, it is really good with a little more soy milk poured over the top before serving.
