Whole Grain Vegan Pancakes

It is officially fall in Colorado, according to both the calendar and the weather. The cool mornings have us craving homey breakfasts. These whole grain pancakes were so good with maple syrup...it was perfect with soy milk and coffee.

Whole Grain Vegan Pancakes



Ingredients:

1 cup whole wheat flour
1 cup oat flour
1 tsp baking powder
1 tbsp flax meal (ground flax seeds)
1/4 tsp salt

2 cups soy milk
1 tsp apple cider vinegar
2 tbsp vegetable oil
1 tbsp maple syrup

Directions:

Combine the dry ingredients in a mixing bowl and whisk to combine (the flours, baking powder, flax meal, and salt)

Combine the wet ingredients in a large measuring cup and add to the dry ingredients. Mix until just combined. Let the batter sit for 5 minutes, while you heat a non-stick pan on the stove over high heat.

Spray the pan with cooking spray and pour the batter by 1/4 cups into the non-stick pan. Cook until browned on one side and then flip.
