Vegan Chorizo Crumbles

We love to have a hearty breakfast on the weekends. One of our favorite combinations is scrambled tofu, with home fries, home made tortillas, and these chorizo flavored crumbles.

This dish is great because the leftovers can go nicely into breakfast burritos that freeze well and make a great breakfast during the week. I assemble the burritos, wrap them in saran wrap, and then freeze them. To re-heat simply microwave for 2 minutes, turing over halfway through.

Vegan Chorizo Crumbles


Ingredients:

1 tbsp vegetable oil
1 12 oz bag of boca soy crumbles or textured vegetable protein
1/2 cup vegetable broth
1 1/2 tsp garlic powder
2 tbsp nutritional yeast
2 tbsp paprika
2 tbsp red wine vinegar
1/2 tsp salt
1 tsp red chili powder
1/2 tsp cayenne pepper
1 tsp ground cumin
1/4 tsp black pepper
1/2 tsp liquid smoke flavoring

Directions:

Heat the vegetable oil in a large non-stick frying pan over medium heat. Add the crumbles to the pan and then add the vegetable broth, and all of the seasonings (garlic, nutritional yeast, paprika, vinegar, salt, chili powder, cayenne, cumin, black pepper, and liquid smoke). Stir to incorporate the flavors and to let the crumbles heat through. You want to simmer the mixture until almost all of the liquid has evaporated.
