Fresh Cranberry Orange Scones

I had some fresh cranberries kicking around in my freezer since the holidays. So when I was deciding what to make for breakfast, it hit me that the cranberries would go great with orange in a lightly sweetened scone dough. Cranberries are so pretty and I love their tart flavor; there is nothing else quite like them.

Fresh Cranberry Orange Scones


Ingredients:

1 cup oat flour
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp allspice
pinch of ground ginger

1/2 cup coconut oil - at room temperature, solid

3 tbsp non-dairy milk (I usually use soy)
1/4 tsp apple cider vinegar

3/4 cup date paste
1/3 cup orange juice

1 1/2 cups fresh cranberries, chopped (I run these through a quick pulse in the spice grinder)
1 tbsp orange zest

Directions:

Preheat your oven to 400 degrees.

Whisk all the dry ingredients together in a large mixing bowl. This includes the oat flour, wheat flour, baking powder, baking soda, salt, allspice, and ground ginger. Be sure you have no clumps of baking soda.

Add the coconut oil to the bowl with the flour, and use your hands to incorporate it into the dry ingredients. You want to break down the chunks of coconut oil, until you have small pea sized clumps in the flour.

In  another mixing bowl, start combining the wet ingredients. Start with the milk and vinegar and stir to combine those. Then add the date paste and the orange juice and mix again.

Finally, add the chopped cranberries, the orange zest, and the wet ingredients to the dry ingredients. Mix until it pulls together into a thick biscuit-like dough. Add more flour if the dough is too wet and sticky.

You can roll the dough out and cut it into triangles, or just roll biscuit size rounds of dough and put them on a lightly greased cookie sheet.

Bake for 12 minutes.
