Oven Roasted Brussels Sprouts

My son is all about the brussels sprouts lately. He saw a YouTube video of kids trying different vegetables, and decided he had to have brussels sprouts. He has been requesting them weekly. This is one of my favorite ways to make brussels sprouts, and now my son loves this version too. I quarter them to ensure more even cooking and roast them in the oven to develop more flavor.

Oven Roasted Brussels Sprouts


Ingredients:

1 lb. fresh brussels sprouts
1 tbsp olive oil
1/4 of a fresh lemon - juiced
salt
pepper
garlic powder

Directions:

Preheat oven to 350 degrees.

Wash the brussels sprouts and then cut the ends off. Quarter each sprout lengthwise and toss with the olive oil and lemon juice. Toss with a few sprinkles of salt, pepper, and a dash of garlic powder. Roast them in the oven for 20 minutes, and stir them halfway through.
