Superfood Quinoa

Yum
Sweet potato and black beans just belong together. When tossed with quinoa, kale, and spices they make a hearty dish that is full of protein, iron, fiber, vitamin A, and vitamin C.

Superfood Quinoa

Ingredients:

1 tsp olive oil
1/2 small onion, diced (about 1/3 cup)
2 garlic cloves, minced

1 cup quinoa
1 1/2 tsp cumin
1 tsp ground coriander
1 cup cubed sweet potato
2 cups water

15 oz can black beans drained and rinsed
1 cup chopped kale (2 leaves with stems removed)
1/4 cup minced fresh cilantro
1/2 lime, juiced
1/4 - 1/2 tsp salt
1/4 tsp black pepper

Directions:

Heat the olive oil in a medium sized saucepan that has a lid. Add the onions and cook them for 5 minutes to let them soften. Add the garlic and cook for another minute. To the pan add the quinoa and let it heat through and begin to toast, just for a couple of minutes. Then add the cumin and coriander and stir to coat the quinoa. Next, add the sweet potato and the 2 cups of water. Bring this to a boil, cover and simmer for 15 minutes.

Once the quinoa and sweet potato have steamed, take it off the heat and add in the black beans, kale, cilantro, lime juice and salt and pepper to taste.
