Pizza with Tofu Cream, Caramelized Onions, and Mushrooms

I have been experimenting a great deal with different pizzas. I love pizza because it is a very versatile canvas. Here is my latest favorite pizza. The onions and mushroom are seasoned with Italian flavors, a little spice, and cooked down to really blend the flavors. The tofu cream is from Alicia Silverstone's Kind Diet Book, and adds a creamy balance to the onions and mushrooms.

Pizza with Tofu Cream, Caramelized Onions, and Mushrooms


Caramelized Onion and Mushroom Ingredients:

2 onions, sliced thin into half moons
5 whole cloves garlic, peeled
8 oz fresh mushrooms sliced
1/4 cup olive oil
1/2 tsp salt
1/2 tsp black pepper
pinch of crushed fennel seeds
1/2 tsp chili powder
pinch of cayenne pepper
1/2 tsp dried basil
1/2 tsp dried oregano

Caramelized Onion and Mushroom Directions:

Preheat your oven to 400 degrees.

Put the sliced onions, garlic cloves, and sliced fresh mushrooms in a casserole dish. Coat with the olive oil and spices (salt, pepper, fennel, chili powder, cayenne, basil, and oregano). Put in the preheated oven and bake for about 40 minutes to an hour, while stirring every 15-20 minutes. You want to really caramelize the onions and cook the mushrooms down. The garlic should get very soft as well.

Tofu Cream Ingredients:

1/4 block of extra firm tofu
2 pickled plums
2 tbsp fresh lemon juice
2 tbsp Vegenaise

Tofu Cream Directions:

Place all the ingredients in a blender and mix until well incorporated.

Pizza Ingredients:

1 pizza crust
1/4 -1/2 cup pizza sauce
Tofu cream
Caramelized onions and mushrooms
Sun-dried tomatoes

Pizza Directions:

Preheat your oven to 475 degrees.

Roll out your crust. I used this recipe.

Smear on your pizza sauce, and drizzle a layer of tofu cream on top of that. Top with the caramelized onions and mushrooms, and add sun-dried tomatoes and/or any of your favorite toppings.

Bake in the pre-heated oven for 10-13 minutes.
