Healthy Happy Oatmeal Cookies

The name says it all; these cookies have me feeling great. They are lightly sweetened with natural sweeteners, made with whole grains, and have chewy raisins and crunchy sunflower seeds.

Healthy Happy Oatmeal Cookies


Ingredients:

2 tbsp ground flax seeds
6 tbsp water

1 cup rolled oats
1 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

1/3 cup raisins
1/3 cup raw sunflower seeds
1 tbsp whole flax seeds

1/3 cup date paste (boil 5 dates in water to cover, add a pinch of baking soda and then blend)
1/4 cup natural sugar (maple sugar is expensive, but great for an occasional treat)
1/3 cup coconut oil, melted
1 tsp vanilla
1/2 tsp molasses

Directions:

Preheat the oven to 350 degrees.

Combine the ground flax seeds with the water and stir well to combine and break up any clumps. Set aside to let thicken.

Mix the dry ingredients together in a large mixing bowl (oats, flour, baking powder, baking soda, and salt) and then add the raisins, sunflower seeds, and whole flax seeds and mix again.

Add the date paste, natural sugar, coconut oil, vanilla, and molasses to the flax meal and stir to combine.

Add the wet ingredients to the dry ingredients and mix until it is just combined.

Roll the dough into 12 balls and place on two lightly greased cookie sheets. Bake for 8-10 minutes, let cool and enjoy.
