Kale Salad with Sesame Miso Dressing

Spring is here! Which means it is time for lightened up menus with salads, juices, and fruits. Yum. I have been making this salad every week and finishing it myself in a couple of days. It is my current favorite lunch.

Kale Salad with Sesame Miso Dressing

Salad Ingredients:

1 bunch of kale, washed and chopped into 6 cups bite sized pieces
1 tsp toasted sesame oil
1/4 tsp sea salt

1 carrot, grated
1 cup thinly sliced green cabbage

Dressing Ingredients:

1 tsp sesame oil
1 tsp bragg (or soy sauce)
1 tsp rice wine vinegar
2 tsp miso paste
1 tsp agave nectar
1/2 tsp fresh grated ginger
dash of cayenne pepper

Directions:

Wash the kale and remove the stems by cutting the leaves from the center. Chop the leaves into bite sized pieces (I like to save the stems for juicing or vegetable broth). Add the sesame oil and the salt. Then use your hands to vigorously massage the kale until it wilts. This takes several minutes.

Then add the grated carrot and sliced cabbage and toss. Next, combine all the dressing ingredients and whisk to combine. Pour the dressing over the salad and toss to distribute.

I like to sprinkle a few black sesame seeds or toasted almonds over the top to serve.
